Biscuit cake with cherries and cottage cheese

You can use any cherries: canned, fresh or frozen

Air biscuit, berry-curd souffle and chocolate icing – the perfect culinary combination. Serve the finished cake chilled with a Cup of strong coffee.

For biscuit:

5 eggs
120 g of sugar
80 g flour
50 starch

Biscuit cake with cherries and cottage cheese

pinch of salt
vanillin
For the cream-cheese souffle:

500 ml whipping cream
300 g of low-fat cottage cheese
5 tablespoons powdered sugar
1 lemon
8 plates of gelatin sheet or 20 g powder
300 g cherries
50-70 ml of juice of cherry
For decoration:

100 g dark chocolate
50-100 ml of cream
almond flakes, coconut flakes or confectionery sprinkles-for decoration

Cooking recipe:

Egg whisk in a solid foam, gradually adding sugar. Then add salt and vanilla. Should get a dense and air mass. Add a little starch and flour, stirring all the time with a spatula.
Form a diameter of 26 cm blanketed with baking paper and pour the mass. Sent in a preheated 180 C oven for 25-45 minutes. Readiness check with a toothpick. Give the biscuit to cool slightly, remove from the mold and cool completely.
Cherry put in a colander and allow to drain the juice.
Mix cottage cheese, powdered sugar, lemon zest and juice. Beat thoroughly with a blender. Soak gelatin in a small amount of warm water (about 50 ml).
Whisk cream in a dense mass. Gelatin is highly soluble in water. Add gelatin dissolved in 3 tbsp of curd and stir. Then this mass is added to the rest of the cottage cheese, stir. Add to the curd mass whipped cream, stir. Pour the cherry juice for the color, mix.
Postpone 1/3 of the cottage cheese souffle. And in the remaining mass add the pitted cherries, mix.
Sponge cake cut into two layers. One cake spread in a detachable form. Half of the cream-souffle spread on the cake. Cover with the second cake. The remaining cream is distributed on the cake.
Sent the cake in the fridge munut 30 and stays frozen. At the end of time we get the cake, remove the ring from the mold.
Chocolate break into pieces, pour the cream. Heating in a microwave oven, melt until smooth shiny mass.
Slightly cool the glaze, so it was not hot, and pour the cake. Decorate with almond petals, coconut flakes or confectionery sprinkles. Give the glaze to harden in the fridge.
