Chocolate cake with ganash

Very simple biscuit cake, convenient because it does not take away a lot of eggs. And time also goes a little. Inside it is damp, does not require impregnation, unless you want to make some special impregnation, for example, on a liqueur or cognac basis. Then the cake should be baked to «dry skewers», when the wooden needle stuck in the cake, it leaves completely dry, let the biscuit cool and has already cooled any impregnated impregnation.

For the cake:
300 g of flour
100 g of cocoa powder

Chocolate cake with ganash

55 g chocolate
70 ml of melted butter, can be mixed, creamy with vegetable
1 tbsp. Sahara
1 egg
1 tsp. vanilla extract
200 ml of espresso
200 ml of sour cream or kefir
1 tbsp. l. baking powder
3/4 tsp. salt

For ganache:
80 ml of creamy cream
100 g of chocolate

In a small saucepan, boil water, put a bowl on the water bath, melt 55 grams of chocolate broken into pieces, stirring constantly, letting it cool down a little.

Beat butter and sugar until smooth, add egg, chocolate and vanilla, whisk again. In the egg-and-oil mixture, add half the dry ingredients: flour, cocoa powder, soda and salt. Add half of the coffee and half of the sour cream (or kefir, if using it). Mix together until smooth. Add the remaining dry ingredients, coffee and sour cream (or kefir) and beat again until smooth.

Pour the dough into the prepared mold (if it is not silicone, oil the form with flour and dust it with flour) and bake in the bottom of the oven for about 45 minutes, or until the toothpick inserted in the center of the cake will not go out slightly damp.

The finished cake should be left to cool in the off oven for 10 minutes, then remove it from the oven and allow to cool completely.

In a small saucepan, bring the cream to a boil. Remove from heat and add half the tiles broken into pieces of chocolate and stir until it melts, about 5 minutes. Wait until the mass thickens, 5 more minutes.

Pour ganache on a completely cooled cake, over the ganache cake, if desired, you can sprinkle with chocolate chips, almond petals or other confectionery decoration. Allow the glaze to freeze for at least 30 minutes.
