Ingredients

flour — 75 g
ground almonds — 80 g
eggs — 5 pcs.
sugar — 200 g
mascarpone — 250 g
cream (fat content 33%) — 200 ml
cream thickener — 1 sachet
Strawberries — 250 g
crushed pistachios — 30 g
strawberry jam — 2 tbsp. l.
Preparation
Heat the oven to 190 °. Mix flour with almonds. Whisk the whipped with 50 g of sugar until a strong foam.

Whisk the yolks with 50 g of sugar and 5 tablespoons. l. water. Stir the flour mixture. Add whipped proteins last. To stir thoroughly.

Bake for 15 minutes. Sponge cake with parchment on a damp towel and fold with a roll. Allow to cool.

The berries are cut into cubes and mixed into a mascarpone cream with pistachios.
