For the dough:

Vanilla cupcakes with protein cream

baking powder-1.5 tsp,

For the cream:

sugar-200 g,
water-75 ml,
lemon juice-1 teaspoon,
eggs — 3 PCs –
How to cook:

Whisk butter and sugar until fluffy white mass. Continuing to beat, enter the egg. Sift the flour with baking powder and add to the dough. Continue to beat with a mixer, pouring a little milk. The dough should not be very thick or too liquid. Turn batter into a pastry bag and put it into the molds, filling them to half the volume. Bake at 180 degrees for 20-25 minutes until ready. Remove the finished cupcakes from the oven and cool them on the grill, then decorate with cream.

For cream, cook the sugar syrup with the addition of lemon juice. Separate the egg whites from the yolks (we do not need yolks), whites whisk until fluffy foam. Without stopping to beat, pour a thin stream of hot sugar syrup. Beat until cream is white and shiny. Put cream in pastry bag and put on cooled cupcakes.
